There are loot differences for capturing or slaying monsters in Monster Hunter World. The game doesn’t exactly show you the loot tables and rewards, especially early on when your research level is low for most monsters.
Bonus rewards for capturing or slaying are both worth your while, but have different reward pools your loot will be chosen from. So if you are hunting for specific material to upgrade or craft armor or weapons you want to have a general idea where you get it from.
By slaying monsters you get your bonus rewards from carving in the final minute of the quest. You carve different body parts and have the choice to carve different body parts for different materials. For example, carving the tail will give other materials than carving wings.
To capture monsters, you need a trap and tranq bombs and a bit of skill to catch the monster in a weak moment. Once the monster is captured, you won’t be able to carve and collect materials. Instead you will get bonus rewards directly in the general reward screen. Capturing will give you in different materials than slaying and also has the chance to reward you with more materials.

The easiest way is the Hunter’s guide in the Monster Field Guide in the Info menu. Keep collecting tracks and slaying monsters to unlock low rank and high rank reward info.
